Zucchini Bread !

Hello world ! Hope you are all happy and healthy today...  I thought I would share a delicious recipe with you today.  I got stuck into baking a couple of days ago, Zucchini bread, slices and olive bread...Yumm !

All great for lunchbox fillers, after school treats and nibbles with a nice hot coffee (and they're all healthy too)  Enjoy!






Zucchini Bread !



  • 3 cups whole wheat flour
  • 1 tablespoon cinnamon
  • 1 ½ teaspoons baking soda
  • ¼ teaspoon baking powder
  • 1 teaspoon salt
  • 3 eggs
  • ¾ cup coconut oil
  • ¾ cup honey
  • 1 teaspoon vanilla
  • 3 cups grated zucchini
  • 1 cup chopped walnuts

Directions:

  1. Preheat oven to 180 c , grease loaf pan
  2. Blend the dry ingredients.
  3. Make a well in the center and pour in the eggs, oil, honey and vanilla. Stir just until mixed – do not overmix.
  4. Fold in the grated zucchini and chopped nuts. Pour batter into greased loaf pan.  Bake for 40 mins or until toothpick comes out clean from centre
